Super Healthy (and Delicious) Breakfast Smoothies
Since I started plant-based eating, I’ve been having a smoothie for breakfast almost every morning! Smoothies are perfect for a quick breakfast or midday snack. In addition, if you have any stomach issues, starting your day off with a smoothie can ease your tummy into processing food for the day by providing it with foods and nutrients that are easily digestible. If you’re interested to see what plant-based eating is all about, try incorporating a smoothie or two into your breakfast options to see if you like them!
Strawberry Pineapple Smoothie
1 ripe banana, peeled
1/2 cup frozen pineapple
5 fresh or frozen strawberries
2 tablespoons coconut milk
1/2 cup coconut water
1/2 cup water
Dash of cinnamon
Optional superfoods
1/2 teaspoon baobab powder
1 tablespoon hemp powder
Directions: Cut the tops off the strawberries if fresh. Place all of the ingredients into the blender. Blend until smooth, and enjoy!
Mixed Berry Power Smoothie
1 ripe banana, peeled
1 cup frozen mixed berries
1 handful of spinach
2 tablespoons nut butter of your choice
1 cup almond milk
1/2 cup water
Optional superfoods
1 teaspoon açaí powder
1 tablespoon hemp powder
Directions: Rinse the spinach, and place all of the ingredients into the blender. Blend until smooth, and enjoy!
A note on optional superfoods: There are many different types of superfood powders you can add to your smoothies. Blending them into smoothies is an easy way to get all of the healthy goodness they have to offer! But for now, some of my favorites (and the ones used in the above recipes) are hemp, baobab, and açaí.
Hemp powder is rich in omega-3 and omega-6 fatty acids. It is also a great source of plant protein, with one serving size supplying 13 grams of protein. Because of its high protein content, I add it into my smoothies every day. Hemp is very fibrous, which helps with digestive issues, and it contains several vitamins and minerals, as well. Hemp powder does not have a strong taste, so it is super easy to add into any smoothie combination. You can purchase my favorite hemp powder here!
Baobab powder is rich in vitamin C, potassium, magnesium, and fiber. It has a subtly sweet taste that adds a fruity flavor when you don’t want your smoothie to be overpowered by a strong taste, such as açaí. You can purchase baobab powder here!
Açaí powder is high in antioxidants, such as vitamin E and vitamin A, and some studies show it evens helps improve brain function. It has a much stronger fruity taste than baobab powder, so it is helpful in masking flavors like spinach (lol). You can purchase açaí powder here!
