Peanut Butter Banana Cookies
These 3 ingredient breakfast cookies are delicious! They are perfect for busy mornings or even a late night treat. All you need are oats, peanut butter, and bananas, and they are flourless, vegan, gluten-free, and oil-free. I hope you enjoy these healthy cookies as much as I do!
This recipe makes 10-12 cookies.
Ingredients
2 ripe or overripe bananas
1 cup rolled oats
1/4 cup peanut butter
Optional Glaze
2 tablespoons powdered sugar
1/2 tablespoon water or non-dairy milk
Directions
Preheat the oven to 350 degrees Fahrenheit.
Cover a baking sheet with nonstick aluminum foil.
Peel the bananas and mash them in a bowl.
Mix in the oats and the peanut butter.
Flatten 10-12 cookies on the prepared baking sheet.
Bake the cookies for about 12 minutes or until the cookies are golden brown.
For the optional glaze, combine the two ingredients. Mix thoroughly until all powdered sugar clumps are removed. Place the glaze into the refrigerator for faster thickening. Once the cookies have cooled, drizzle the glaze over them and enjoy!
