Chickpea, Tomato & Arugula Salad
This chickpea, tomato, and arugula salad is the best salad I have EVER made! It’s fresh, creamy, and incredibly healthy. I often make it at the beginning of the week with hopes it will last me a few days, but it’s usually gone within a few hours. This salad is so light, refreshing, and perfect for summer snacking!
Ingredients
1 15 oz. can of chickpeas
3-4 Roma tomatoes
2 hearty handfuls of arugula (kale or spinach would work, as well)
1 tablespoon tahini
juice of 1/2 lemon
1/8 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon onion powder
Directions
Drain and rinse the chickpeas.
Chop the Roma tomatoes into roughly equal bite-size chunks.
Combine the chickpeas, chopped tomatoes, and rinsed arugula in a medium to large bowl.
Add the tahini, lemon juice, salt, black pepper, and onion powder, and mix until combined.
